1/2 cup chickpea flour
1/2 tsp baking powder
1/8 tsp onion powder
1/8 tsp garlic powder
1/4 tsp turmeric
1/2 cup of water
salt + pepper
mix everything in a bowl and let sit for 10 min.
while your waiting prepare the filling. Saute onions, spinach, olives, tomatoes, squash, mushrooms. Use whatever you like! Set aside when finished.
In a large skillet or frying pan add some olive oil and turn on medium heat.
Pour in batter, cook for 3-5 minutes and flip.
Then sprinkle on some diaya cheese and add your filling.
Fold over like an omelet or serve it open face. Salsa goes perfect with this!
